    back to top EASY HEALTHY RECIPES EASY FAMILY DINNER RECIPES: BEEF Sue’s Easy Tasty Slow-Cooked Steak Ingredients 2 pieces Blade steak, bone out 3 Rashers chopped Bacon 1 large onion sliced 2 Tomatoes sliced 1 packet French Onion soup Foil ​ Method Preheat oven to 150 degrees Place steak on foil ensuring that there is enough to wrap over it Sprinkle the top of the steak with French Onion soup (only enough to cover steak) Add sliced tomatoes, then sliced onions and lay bacon on top. IMPORTANT: Wrap up foil ensuring that you seal all around. HINT: It's important to layer in this order for tomato juices to mix with the soup. Place on a baking tray Bake at 150 degrees for about 2 hours turning after one hour. Meat melts in your mouth! ​ Serve with a potato in foil and steamed vegetables ​ ​ HINT: Topping the potato with a dollop of sour cream and a sprinkling of chives adds to the presentation and flavour. ​ VARIATION: Instead of using French Onion Soup, tomato, onion and bacon on the top of steak, substitute enough water to cover the steak and top with 2 tablespoons plum jam spread over the top.     Back to top BEST STARTS FOR KIDS What are The Two Best Pieces of Parenting Advice Ever? Regardless of where you live or how much money you have there are two best pieces of advice, I've learned, that make the biggest difference to a child's chances of overall life success. They are: ​ 1. Beginning with the end in mind: Know what you want to achieve, and set up habits to ensure your behaviour is consistent with your values. Set up a positive and aspirational environment for your child to learn and socialise in ​ 2. Provide a quality language and learning environment from birth. That means encouraging the qualities you'd like your child to possess as an adult. If this is hard, something easier to consider is, you likely know the things you don't want your child to be... For example: You mightn't want your child to grow up to be morbidly obese, drug dependent or in gaol. So you'd look for the opposite qualities to these: healthy, resilient and honest. ​ So to begin, what are the qualities you want to nurture in your children? ​ For example, the qualities we wanted for our children was for them to be: healthy, happy, kind, tolerant, responsible, intelligent, capable, resilient & independent as adults. We ideally wanted them to go to University, have quality friendships and quality relationships in their life. And while those qualities listed are already extensive, many other qualities were also equally important. e.g: honesty, loyalty, patience, compassion, being a nice person, etc. You may have even more than that. Having parenting goals helped guide our parenting styles to ensure we were consistent. As two simple examples: We valued health and education so we provided healthy meals, the opportunity for exercise and we modeled being healthy ourselves. We actively supported education and we also talked about the importance of goal setting and the habits which underpin them. ​ And like most parents, as our children grew, we wanted to help them achieve what they wanted. Because one wanted to be a doctor, (or vet,) & the other a 'building scientist' (an engineer,) we provided learning opportunities around their interests. One really simple consideration could be: It's likely your child will spend between eleven and thirteen years in some form of school setting (prior to any vocational or university training.) Therefore doesn't it make sense to ensure your children have got the skills to succeed there. ​ The difference in capability levels between children, on first presenting to a school environment is often quite pronounced. ​ E.g.: Can your child understand and follow staged instructions? Or do they find it difficult to listen. Are they able to visualise simple mathematical operations in their head, or are they unable to count reliably to ten. Something to consider is, while genetics has created your child's brain, it's the the wiring up that is equally important. The more neural pathways created in the brain during early childhood, the better foundation for lifelong learning. There are simply more pathways available through the brain, to both store, and retrieve, information. ​ And one of the most effective ways to help wire up a brain is through using language. Here are some ways to help develop overall language development: Extending vocabulary Providing an understanding of prepositions Developing a language of comparison e.g. Size, colour, shade, shape, age, etc Developing a language of classification: animal, plant, food, clothing, transport, weather, etc Developing awareness of sounds within words and from that, word building Developing an understanding that text conveys meaning Familiarity with the conventions of text 'Treat a child as though he is already the person he is capable of becoming.' ​ Haim Ginott Out of everything I wish parents knew, these two best pieces of parenting advice would be it. Imagine if you could change just two things early in your child's life, that would make the biggest positive difference to his or her chance of overall life success. 1. Beginning with the end in mind This can be a really interesting conversation to have with a partner because you'll likely have differing weightings to the same qualities. When both parents make a commitment to make a child's success a priority, and work together to achieve it, a child's chances of life success are much greater. They work together to provide positive environments, habits, educational opportunities, life experiences and social networks. Decide what qualities are important Provide experiences that support your child establishing these qualities Devise habits and organization which consistently support success over time Refine your organization and habits as required and as your child grows Increase your child's responsibility and independence over time Why begin with the end in mind? ​ What surprised us was, by starting early and knowing the qualities we wanted our children to possess, it resulted in them having much greater life choice as both adolescents and adults. Both of our kids did exactly what they wanted. One is a doctor who graduated with Distinction, the other an engineer who received multiple merit-based scholarships, including one from the CSIRO. ​ (And they still succeeded even though our family had some major life-changing health issues to deal with along the way after an accident.) 'Stacking it' by spending time early on makes sense. Your child can start school feeling like they're good at learning. And they're more likely to enjoy it and be good at it, as a result. But for those who start behind, they compare themselves to others. They can feel they're not good at learning, and can develop a negative attitude as a result. Then it's often remediation later when they're struggling, and have a negative attitude. ​ Are you more likely to act out if you're succeeding or if you're not succeeding? ​ Why would it be different for your child? ​ ​ 2. Providing a quality language and learning environment from birth works well because: The earlier your child has a good vocabulary and can comprehend what's being said to, and around them, the earlier they can learn new concepts independently. ​ The more they learn, the more they are capable of learning. Their brain is continually building neural pathways and connections. And the number of pathways and connections made, are based upon the amount of stimulation they receive. Add 100 ml vanilla yoghurt 3. Add slightly less than half of the berries 4. REPEAT 5. Top with remaining toasted muesli, more berries and yoghurt 6. Keep in refrigerator until ready to serve 7. Add remaining berries just prior to serving 8. If you write your child's name in largish letters you can get your child to trace over the shapes in their name with their fingers or a pencil. Identify the bumps, curves, ovals and sticks they have in their name. Explain that everyone's name is made up of the same basic elements (ovals, sticks, bumps & curves) but the order and the number of these parts is different for each person. So it needs checking if there's an issue ​ Staging the complexity of instructions improves comprehension ​ Increasing understanding of prepositions increases comprehension ​ Pragmatic language develops by observing facial cues, intonation, volume, body language etc ​ Language supports future learning so vocabulary and comprehension matter Anchor 1 Have you ever considered the quality of the language you use with you children? ​ Is it possible that the language you use may be largely functional? E.g. Put your socks on please. Have you found your shoes? Grab your bag. We have to go. ​ So why do we need to take time to talk with our kids? To develop their vocabulary through reading To extend their level of comprehension by exposing them to increasingly complex concepts And to help them learn how pragmatic language works: facial expressions, intonation, inflection, volume, when to pause Why are Language Skills Important to Life Success? Complex language doesn't develop unless children are exposed to it. ​Language is the foundation for most other learning to build upon. As we grow, competent language skills are crucial for more complex understandings. A well-developed vocabulary, the ability to articulate well and the ability to read and write well, all assist us to succeed early in life. And although this doesn't necessarily guarantee life-long success, early language skills greatly increases its likelihood. Be it fair or not, in our modern society we're judged by our ability to communicate. As a parent it makes sense to ensure our children are as effective at communicating as possible. Because for many of us, our communication skills create our life. For example: Even as adults, if we go for an interview and are poor communicators, we are often judged as having less ability than we actually possess. I know someone with an IQ of 140+ who has a stutter. While he had the brainpower to do whatever he wanted, people were inclined to assess his abilities as lower than they actually were. His resultant loss of confidence made things even more difficult for him. ​ For a child to thrive in a school environment, the child needs the vocabulary to understand what's being said to them. Otherwise learning is difficult & school can become tedious. ​ Lack of early school success can set your child up with a negative attitude to formal learning. And it can be a big contributor to behaviour problems. ​ ​ Why the Ability to Follow Directions is an Indicator of Comprehension Anchor 2 How to Develop Instructional Language: I've seen children who've had very limited ability to follow directions, and this is serious, because it can affect their future learning. ​ As just one example: They could be identified at the beginning of school, by their inability to understand simple prepositions like: behind, next to, in front, beside, etc while lining up. And then, when their 3D world is reduced to a 2D world (on a page, or electronic whiteboard,) their lack of ability becomes even more apparent.​ Anchor 3 For example: While instructions may have been in single directives (one instruction at a time,) they may have been issued more quickly than the child can follow. And while they're still working out the first thing, the teacher has moved on to the second, or third direction. The potential confusion, and frustration, for these children can adversely affect their attitude to learning. Consider... Do you ever get frustrated, that your child didn't do what you asked them to, or half-did what was asked, or did it incorrectly. Or didn't even attempt it. If your child frequently misunderstands you & has difficulty producing sounds accurately it may be prudent to get their hearing checked, particularly if they're not hearing softer sounds like 'c' and 'g,' or the difference between vowels sounds like 'e' and 'i,' as in pen and pin. ​​​​Assuming there's no suspicion of a hearing disability, it can still be quite difficult for children to move from simple instructions, to more complex ones. Moving from single directives, to multiple directives, needs to be done in stages for your child to understand what's expected. And it's wise to provide familiar circumstances, as a scaffold, as you increase the difficulty. ​ ​For example: Can you please get your lunchbox? (1 variable) Can you please get your lunchbox out of your school bag? (2 variables) Can you please get your lunchbox out of the orange travel bag and put it on the sink? (4-5 variables) ​ The above examples provide staging of the difficulty of a routine you may wish your child to assume over time. ​ However, 'Can you please get "Whiskers' from behind the lounge, give her a drink of milk, some dry food and put her outside for a wee?' may be much less likely to be achieved with success. ​ Anchor 4 The Value of Staging Variables in Instructions If you haven't staged the introduction of instructions with your child, by increasing their complexity over time, they may understand less than you hope. Lack of comprehension can have both functional and behavioural implications. ​ Assuming that like most children, your positive attention is better than your negative attention, your child will likely try to do what you ask. But your child will also quickly lose interest, or become upset, if they're not achieving what you expect. What's the point for them, if they're trying their best, but you're still not happy. ​ It makes much more sense to stack it, so your child feels success. Anchor 5 ​To assist your children in following directions well, helping them to understand prepositions may help. ​ ​ We use prepositions all the time. For example: Can you put your bag inside your cupboard? The boy is behind his mate. And especially in school settings: Can you draw a circle around the blue square? ​ ​ There are a lot of prepositions and they're often used in instructions. Definition: Prepositions are words that show how nouns relate to other words within a given sentence, or to each other. The penguin is under the table. The ball is on top of the chicken. ​Where is the heart? The heart is between the Wolf and Red Riding Hood or it's in the middle. ​ Where is the Wolf? He's next to or beside the heart. ​There are some excellent first learning books that identify common prepositions and I suggest examining them with your child. Or you can also find real life examples of prepositions, or play a game like 'Swapsies' with your young child. ​ For example: 'I'm behind you and you're in front of me. But where are you now?'     back to top EASY HEALTHY RECIPES QUICK & EASY DINNER RECIPES: RICE Lorraine's Easy Fried Rice Ingredients 1 cup Basmati or long grain rice 5 rashers bacon diced in 2.5 cm pieces 1 onion diced 1 cup frozen vegetables (peas, corn, carrots work well) 3 eggs beaten 3 cups boiling water ½ tablespoon Soy sauce 1 tablespoon Olive Oil Additional Olive Oil Spray ​ Method 1. Pour rice into the bottom of a microwave dish. Add three cups boiling water and boil rice in the microwave for 10 minutes. Cover for five minutes and fluff with a fork. 2. Heat 1 tablespoon Olive Oil in a large frying pan 3. Add onion and bacon to large frying pan 4. Cook on medium heat for five minutes or until onion has become transparent 5. Move bacon and onion to the edges of the frying pan and spray the centre with Olive Oil spray 6. Reduce frying pan heat to low 7. Cook beaten eggs in the microwave for 1 ½ minutes – 2 minutes 8. Chop egg into pieces with an egg flip and mix together with onion and bacon 9. Add frozen peas and ½ tablespoon soy sauce and cook on low heat for 1 minute 10.Add previously cooked rice ​ Serve with honey soy chicken wings and steamed Asian style vegetables ​ HINT: Boil the rice the evening before in the microwave for 10 minutes. Cover for five minutes and fluff with a fork. Put in refrigerator overnight.     back to top EASY HEALTHY RECIPES EASY FAMILY DINNER RECIPES: BEEF Home Made Hamburgers by Jamie Ingredients For Patties 500 grams of good quality minced beef 1 onion finely diced 2 eggs 1 tablespoon tomato sauce Olive Oil spray ​ For Burger 1/2 Iceberg lettuce washed and shredded 2 sliced tomatoes 4 slices cheese 1 small tin beetroot 1 small tin sliced pineapple 4 Hamburger Buns ​ Optional: Bacon and Fried Egg ​ Sauce Use either commercial tomato or BBQ sauce ​​​​​​​​Method 1. Mix above ingredients, roll into long tube shape. Wrap in glad wrap and place into refrigerator overnight. 2. Preheat horizontal grill and spray with olive oil spray. Slice tube into equal width pieces. 3. Place up to four patties at a time in grill ensuring that they're evenly spaced and flatten them by closing it 4. Cook in grill ensuring that once closed you do not open the grill again until at least five minutes have passed. This allows the patty to retain its integrity. ​ Optional: If you would like to add eggs or bacon cook after patties in grill. Serve on toasted hamburger buns with shredded lettuce, sliced tomato, beetroot, sliced cheese, sliced pineapple ​ HINT: Hamburgers retain their integrity better if they're made the night before. Preheat oven to 150 degrees 2. Mix soy sauce, olive oil, lemon juice, garlic, ginger, honey and cornflour together. 3. Spray baking dish with olive oil spray 4. Place BBQ chicken in the centre of the baking dish and pour 1/3 of the soy sauce mixture over the top OR alternatively cut into quarters, pack together in a small oven proof dish and pour liquid over each quarter 5. Cook in oven for fifteen minutes 6. Pour additional 1/3 soy sauce mixture over BBQ chicken 7. Cook for additional five minutes 8. Pour remaining 1/3 soy sauce mixture over BBQ chicken 9. Cook for additional five minutes 10. Slice chicken into serving pieces Serve with Udon noodles and steamed Asian vegetables ​ N.B.
