Easy Berry Brekkie by Michael

If you want to create a great impression for breakfast, Michael's Easy Berry Brekkie is a great way to do it. Here, I've prepared the recipe in a wine glass because it's transparent and the choice of glassware looks great on the table. But this recipe can be equally well-prepared in a clear plastic glass and be eaten outside. I've even seen this recipe both prepared and eaten at the beach.

One of Michael's Easy Berry Brekkie's greatest advantages is, it stores well and can be easily made ahead of time. And it's really healthy.

1 cup Vanilla yoghurt

½ cup Toasted Muesli (I use Carmans)

2/3 cup mixed frozen berries



1.In a glass put in half of the toasted muesli

2. Add 100 ml vanilla yoghurt

3. Add slightly less than half of the berries


5. Top with remaining toasted muesli, more berries and yoghurt

6. Keep in refrigerator until ready to serve

7. Add remaining berries just prior to serving

8. Garnish with mint


VARIATION: Add frozen mixed berries in two to three layers above muesli or yoghurt and store in refrigerator until ready to eat

HINT: This can be made a day ahead of time in plastic cups and used for visitors
