EASY HEALTHY RICE RECIPES
Deb's Rice Pie
2 sheets shortcrust pastry thawed
(Alternatively you can make your own wholemeal pastry using 2 cups wholemeal flour, 200 grams salted butter, 2/3 cup milk like I do. It takes about 8 minutes longer but I love the taste so think it's worth the extra effort)
Homemade Wholemeal Pastry Ingredients
2 cups wholemeal flour
200 grams salted butter
2/3 cup milk
Put flour into a large bowl.
Add chopped butter
Rub butter through flour so that it resembles breadcrumbs. Alternatively use a food processor if you have one.
Add milk a little at a time and stir in until dough is formed.
Roll out on a floured board and use as both the bottom and top of the pie.
1 cup brown rice
2 cups boiling water
1 packet frozen spinach thawed
1/2 cup parsley
1 tablespoon fresh oregano
1 tablespoon fresh basil
2 cups ricotta cheese
2 teaspoons salt
2 teaspoons black pepper
2 teaspoons nutmeg
1 cup diced Feta cheese
Preheat oven to 180 degrees
Boil water in a kettle and add to rice. Cook in microwave on high for 10 minutes. Stir. Cook another five minutes and stir. Cook another five minutes and remove and allow to stand.
Finely chop fetta, oregano, parsley and basil and add to spinach
Mix the rice with the ricotta cheese in a separate bowl and add nutmeg, salt and pepper.
Add to rice and ricotta mixture
Grease a casserole dish and place pastry sheet over it or use baking paper instead.
- Press the mixture firmly into it
Cover with top sheet of pastry
Brush top with milk
Bake for 30 minutes on high
Serve as a meat free protein rich meal with salad
HINT: You can use fresh spinach if you wish. You will need about fifteen leaves with stalks removed and chopped.
