4 salmon steaks (the tail sections are usually the most tender and quickest to cook)

1 tablespoon olive oil

1 cup mayonnaise (low fat is best for your health)

½ cup light sour cream (optional)

½ cup chopped fresh dill

2 tablespoons lemon juice

Sea Salt

Cracked pepper to taste

Salmon Breast

  1. Sprinkle skin of salmon with sea salt and cracked black pepper

  2. Heat 1 tablespoon Olive oil to a medium/hot level in a frypan

  3. Cook salmon skin side down for 4-5 minutes (or until cooked portion appears to be slightly less than 1/3 of the way through)

  4. Turn salmon over and cook for another 3-4 minutes (or until cooked portion appears to be slightly less than 1/3 of the way through)

  5. For best result the centre of the salmon will still be pink and the non- skinned side of the salmon will be just beginning to flake with a fork

  6. Combine mayonnaise, lemon juice, dill and sour cream and pour over the top of the salmon. If you like a bit of a kick you can add a teaspoon of Dijon mustard as well

Serve with fresh salad greens and garnish with sprinkled dill

HINT: Using low fat mayonnaise is a healthier alternative
