Debbie’s Mexican Steak

This Mexican Steak recipe freezes well. It's versatile and can also be used for Enchiladas, Chilli Con Carne or Beef Nachos.

I always keep at least one lot in the freezer in case unexpected visitors call in. Then I can have a meal on the table in 15 minutes from when they walk in the door.

This recipe pretty much cooks itself.

2 large pieces of chuck steak

1 onion diced

1 can Mexican chilli beans

1 can refried beans

1 teaspoon minced chilli

1 tablespoon cumin

1 tablespoon garlic

2 Massel beef stock cubes

  1. Put diced onion in the slow cooker first

  2. Add two pieces of chuck steak

  3. Add all other ingredients over the top and cover

  4. Cook for approximately six hours on a medium heat or until steak begins to come apart easily

  5. Remove steak from pan and shred it with a fork. Remove any excess fat

  6. Place shredded steak back into slow cooker and mix through other ingredients

  7. Cook for approximately half an hour so that ingredients mix through

Serve with Honey Salad and Turmeric rice or as filling for tacos
