Anne Maree’s Easy Pumpkin Risotto

Pumpkin risotto with thyme and parmesan


100 grams butter

1 Butternut pumpkin diced in 2 cm cubes

1 brown onion finely diced

1 teaspoon minced garlic

2 cups Arborio rice

6 cups water

6 Massel chicken stock cubes

1 cup fresh parsley finely chopped or 3 sprigs of thyme

1 cup tasty grated cheese




  1. Put onion in with butter and cook in microwave on high for 5 minutes

  2. Add minced garlic and cook for a further 1 minute

  3. Pour into the bottom of a large baking dish

  4. Add Arborio rice ensuring that the bottom of the dish is covered and that rice is level within container

  5. Add pumpkin

  6. Boil 6 cups of water then combine stock cubes with water ensuring that stock cubes dissolve

  7. Pour over the top of the rice

  8. Cover with foil and cook in hot oven 180 degrees fan forced for 40 minutes or until rice is cooked

  9. Remove from oven and mix tasty cheese and chopped parsley through

Serve immediately as an accompaniment for meat dishes or as a dish on its own with salad


HINT: You can add truffle oil if you wish
