Easy Italian Soup by Debbie

But it could be called 'Whatever I've Got Left Over in the Fridge Soup

​Ingredients

  • 1 medium sized onion

  • 3 spring onions

  • 2 large potatoes diced into 1 cm- 1 1/2 cm cubes

  • 1 medium sweet potato diced into 1 cm- 1 1/2 cm cubes

  • 4 Massel beef stock cubes

  • 1 broccoli floret diced

  • 1 medium sized zucchini

  • 6 button mushrooms sliced

  • 3 cauliflower florets diced

  • 3/4 cup frozen peas

  • 300 mls tomato paste

  • 1 tin mixed beans drained

  • 1 440 g tin crushed tomatoes

  • 1 cup uncooked couscous

  • 8-10 cups boiling water

  • 1 sleeve basil leaves stripped and finely chopped

  • 1 sleeve oregano leaves stripped and finely chopped ( keep the best quality 30 or 40 leaves aside for garnishes)

  • salt and pepper to taste

  • 1/5 cup shredded parmesan cheese/ person

Optional 2 teaspoons crushed garlic

Method

  1. Fry onions in oil for two minutes, add spring onions and cook for another two minutes

  2. Optional Add garlic and cook for one minute

  3. Add 4 cups boiling water, 4 stock cubes. Add potatoes and sweet potato and cook for five minutes.

  4. Add 300 mls of tomato paste and 1 tin of crushed tomatoes. Stir.

  5. Add cauliflower, broccoli, zucchini, mushrooms, oregano and basil and cook for ten minutes

  6. Add drained beans

  7. Add frozen peas and couscous cook for another seven minutes

Garnish with individual oregano leaves

​

Serve immediately with grated parmesan sprinkled on the top

This thick and hearty vegetarian recipe creates at least ten huge serves and is perfect for feeding a crowd for lunch.

 

Served with my home made bread it's a delicious meal and is perfect for winter lunches, or a rich starter for winter dinners.

​

If you're looking for a quick and easy delicious soup this one is hard to beat.

​

HINT: This is a great way of utilizing whatever vegetables you have left in your fridge. Easy substitutions can be made using beans, squash, leek or pumpkin for example.

​

I also use the centre of the cauliflower and peel the broccoli stalk and use it as well... That adds another 2 cups full of vegetable matter to the soup... which basically feeds another person with what some people would throw away

​

If I'm making this as a meal just for my family I freeze the leftover soup in Chinese food containers ready for winter lunches.
