Easy Impossible Pie by Jilly

Taken from her Grandma's Original Recipe

Basic Ingredients

4 large eggs

½ cup plain flour

1 cup milk

1 cup cream

½ cup melted butter

1 onion thinly diced

Add at end

1 cup grated cheese


Add for Option 1

1 can salmon drained and some chopped dill                       

Add for Option 2

3 chopped shallots/ or spring onions, 4 rashers bacon, 1 diced tomato, 1/3 red capsicum finely diced or           

Add for Option 3

3 chopped shallots/ or spring onions, 4 rashers bacon,

½ diced and precooked butternut pumpkin




  1. Preheat oven to 160 degrees Celsius

  2. Grease an 8 inch cake tin with cooking oil spray

  3. Mix all initial ingredients together that being eggs, flour, butter, cream and milk

  4. Add fined diced onion

  5. Add whichever of the options you wish above

  6. Pour into  well-greased pie dish

  7. Cover with grated cheese

  8. Place in oven and cook for 35 minutes or until golden on top

Beating Eggs


This pie can be served either hot or cold as a main or side dish and can be used for breakfast, lunch or dinner.

If using for Lunch or Dinner

Option 1 is delicious with coleslaw and potato salad

Option 2 is ideal with a green or Greek salad

Option 3 is delicious served with baked chicken and any variety of salad
