Easy Chicken and Mushrooms by Sam


12 chicken drumsticks

5 rashers chopped bacon

250 g. punnet button mushrooms

2 onions cut into thin wedge shapes

1 teaspoon minced garlic

2 Massel stock cubes

1 cup water

1 cup red wine (Optional)

Olive Oil spray


Fresh Sage for Garnish

Fusilli Fungi


1. Spray large electric frying pan with Olive oil spray

2. Add onion to frying pan and cook for three minutes on a medium heat

3. Add chopped bacon to pan along with garlic, cook for two minutes

4. Add chicken legs and cook on a medium heat, browning all sides of chicken

5. Reduce heat

6. Quarter button mushrooms and add to frying pan

7. Add chicken stock cubes and water

8. Add red wine if you wish

Cover and simmer for forty minutes stirring occasionally

Garnish with Fresh Sage


Serve with pasta, beans, carrots and yellow squash
