Chicken Noodle Soup for Sickies


4 chicken wings

2 spring onions chopped

4 cups chicken stock made with Massel chicken stock cubes

1 strip Udon noodles or Ramen noodles

1 tablespoon of Olive oil or oil spray

Salt and Pepper to taste

Optional: snipped garlic chives or coriander

1. Heat olive oil in a fry pan

2. Add spring onion and cook for approximately a minute

3. Add chicken wings and stock and boil until chicken begins to come off the bone

4. Remove chicken wings from boiling stock and allow to cool a little

5. Remove bones and gristle from chicken and return pieces of chicken to stock

6. Return to the boil and add Udon noodles, breaking them into approximately one inch (3 cm) pieces as you go

7. Boil for three minutes

Optional: Add snipped chives and thinly sliced carrot

Serve: with dry toast


HINT: This is ideal for those who are feeling unwell with a cold or flu. It's very tasty and the chicken bones give it extra flavour. I generally don’t add additional salt as the stock is salty enough, although pepper works well.
