Chicken and Green Olives by Crellyn


12- 20 chat potatoes (depending on size)

1 bag baby spinach

4 chicken breasts (or 8 thigh pieces)

1 red onion

Oil for frying


For butter

100 grams butter

¾ cup olives stuffed with anchovies

1 teaspoon finely grated lemon rind

1 teaspoon minced garlic

1 tablespoon chopped basil

  1. Boil chat potatoes in a large boiler for approximately 8-10 minutes or until tender

  2. Cook chicken breast fillets in a frying pan on both sides until cooked

  3. Remove chicken and add red onion

  4. Wrap chicken in foil to keep warm

  5. Combine 100 gram butter with olives, grated lemon rind, minced garlic and chopped basil

  6. Pour over hot chicken and allow to simmer for five minutes


Serve immediately on top of baby spinach with chat potatoes


HINT: You can also substitute salmon for chicken as well
