Christmas Pudding
Berries

Ingredients

420ml apricot nectar

750 g mixed dried fruit

2 cups self-raising flour

 

Method

1. Soak fruit in nectar overnight

2. Add flour, mix thoroughly.

3. Place in a lined 20 cm (8”) cake tin

4. Bake for 45 minutes (approx.) at 180 degrees. (Test with skewer to see if it is cooked.)

5. Leave in tin to cool.

Ingredients

1 can condensed milk

375 g mixed fruit

1 cup SR flour

 

Method

1. Soak fruit & condensed milk overnight

2. Add flour, mix thoroughly. Mixture will be very thick.

3. Place in a lined 20cm (8”) cake tin. Bake for 35 Minutes (approx.) at 180 degrees. Test with skewer.

4. Leave in tin to cool.

 

Serve with ice-cream and custard
