Easy Pumpkin Quiche by Lorraine


For Base:

1 1/2 sheets frozen puff pastry

For Filling

5 spring onions or 1 red onion

4-5 rashers bacon

1/2 butternut pumpkin cubed

8 eggs

1 cup cream

1 cup grated tasty cheese


  1. Preheat fan forced oven to 160 degrees.

  2. Put 1 1/2 sheets of frozen puff pastry out to thaw.

  3. Line a rectangular pyrex dish with baking paper.

  4. Place pumpkin cubes in a microwave container. Cover with water. Place in microwave and cook on high for 10 minutes. Drain.

  5. Line pyrex dish with puff pastry.

  6. Spread  cooked pumpkin over the pastry base.

  7. Dice spring onions and bacon into small pieces.

  8. Fry in frying pan until brown. HINT (I often wait until pumpkin is cooked and put bacon and onion in the same microwave dish to cook in microwave on high for 2 minutes. Stir. Then cook for another 1-2 minutes. The difference in taste isn't worth the added inconvenience to fry them.)

  9. Sprinkle cheese over the base.

  10. Beat 8 eggs.

  11. Add cream and mix together.

  12. Pour over all ingredients.

  13. Place in oven to cook for approximately 30-35 minutes or until the top has turned golden brown.

Serve with oven baked potato chips and salad.
